The Italians have their priorities right: They're driven, they do their work, but they really enjoy the day-to-day and they don't put off the enjoyment of the everyday for some future goal.

What has impressed me the most about the Italians whose tables we've sat at is that they are traditional cooks but also outrageously innovative. These people are wild improvisers.

I think in terms of the day's resolutions, not the years

I think people right now are just looking at day to day. They're not looking at their future. Like I said, New Orleans is destroyed. We don't know if we're going back to it or if we'll stay. You do have to live each day, but you have to prepare for the future as well.

We believe we have the right to know what's know going on. Day to day we get to work wondering if the factory will be closed and if we're going to lose our jobs.

It's like the clock that doesn't work, it's right at least twice a day.
