We had a change in the food code Dec. 13, 2003 — that was the effective date. We started enforcing the requirements the following week. It was a soft enforcement. We're doing more education than enforcement.

We believe it's hard to change people's habits and that the most practical solution is to improve the food they do eat. With a burger, for example, you would simply remove some of the fat and replace it with the seaweed extract, which is an entirely natural product from a sustainable resource. You'd have a healthier burger and it's unlikely to taste any different.

People change. Young people don't cook as much as they used to. They want quick food. They don't buy as much raw vegetables.

It was a slight change for me, because I've worked mostly in the food business.

If you change the quality of your diet by increasing the servings of nutrient-dense food and reducing -- actually, it would be better to slowly eliminate -- all of the servings of 'empty' calorie foods, you improve your chances of living a healthier and longer life.
